Whether you are a full blown vegetarian newbie who is stuck in the meal planning or you just want to take a break from the meat, but don’t have the time to go hunting for new or exciting meatless dishes, our food post is for you. After all, we’ve been in the kitchen a lot and wanted to gift you with seven meatless lunch ideas to take you from Sunday to Saturday.
1. Sunday - Plantain LASAGNA
It is hard to miss the meat in this filling Puerto Rican inspired dish also known as Pastelon. The savoury and sweet layers of ripe golden plantains and assorted vegetables are prepared separately before coming together in the oven as a tasty vegetarian casserole. Everyone will enjoy this cheesy masterpiece, a perfect meal for your Sunday lunch.
2. Monday - Cauliflower pizza
This homemade Cauliflower Pizza is ideal for veggie lovers who want to get hands on with their food. Made with a crunchy thin crust and webbed with grated Gouda cheese, our pizza version for vegetarians is simple and mouth-watering. Traditional pepperoni slices were replaced with ripe plantain on a bed of tomato sauce and cauliflower florets. The sprinkling of Italian seasoning on the melted cheese zings about your mouth in the cacophony of complimentary flavours.
3. Tuesday - Lentil Peas Soup
There isn’t nothing as hearty and comforting as a steaming bowl of soup, lentil soup. It makes you want to dance when it takes even less time to make. Lapping steam rises above the thick stew of soft lentil peas, buttery sweet potatoes and crisp jade leaves of kale. Fragrant with garlic, onion chives and tarragon leaves and extra virgin olive oil, the vegetarian soup is a must have if the week brings torrential rainfall. A bowl of this paired with toasted naan bread or piping hot Johnny cakes will bring out the YES in you.
4. Wednesday - Spinach & Carrot Quiche Cupcakes
Here is a yummy neat package of exquisiteness that will take you from brunch to lunch. Forget quiche slices. You deserve to have a taste of that flaky crust and creamy quiche each time you lift the fork (or your hand) to your mouth. And this is exactly what you get. Cupcakes crowned with a dash of paprika and baked treasure in its depths. Who says eating your veggies has to be boring?
5. Thursday - Pasta & Quinoa Pelau
Marry this one-pot wonder with a colourful selection of velvety beets, cucumber wheels and diced tomatoes. Spruce up the nude pasta and quinoa with a pop of bright green broccoli florets that are blanched neon near the end of cooking. This is one of those meals you can’t take your eyes off until all the colour on your plate disappears.
6. Friday - Chunky Hummus & Johnny Cakes
Tear open one of these homemade Johnny cakes and let the steam go free. Sop up our blender-free hummus with diced tomatoes and delicious avocado slices that will melt in your mouth. This is not your typical sandwich. Just better.
7. Saturday - SALTFISH WITH PURPLE CABBAGE AND TOMATOES
Tri-coloured and stewed, this meal is perfect with a warm cup of rice or steamed green bananas. We used homemade coconut milk to simmer after pan-frying ingredients the salt fish with caramelised onions. It is an easy concoction once you let all the ingredients do the hard work for you.
