In my case, I let the lentils simmer alone until the look like they are about to fall out of their skin. Next, the diced sweet potato joins them and get all buttery and soft. Then I add the leafy family of kale, cauliflower, chopped garlic and onion chives. These need less time in the heat; otherwise, they will shrivel and their flavors dissipate. When the kale is a beautiful bright green, turn off your stove. Add extra virgin olive oil and salt absolutely last.
